Recently found a couple persimmon trees on our new property and don't have any experience with them. Seem to be ripe, soft to the touch and a few lying on the ground. Any advice on preparation or good recipes?

Persimmon bread and pie are great. Sorry don't have any recipes for you, we don't grow them.

Jelly.....or even better, bait deer.........

Wait until after the first frost to pick them. They have been known to cause "gastro-intestinal distress" if harvested too early. Found that out the hard way growing up in MO.

Thanks everyone. And Grumpy we often don't get a frost here until November, the way they are dropping off the tree I would think they would all be gone by then. Guess I'll be doing some research before trying them...don't need the bubble guts.

If they are not so sour they make you get a severe pucker, they are probably ripe. Specially if they are dropping. Maybe try a bite or two

Up until this thread, I had no idea what a persimmon was.......

If they are not ripe you will know it. If we wait till frost we would never get any persimmons here, I eat the wild ones, but we don't have any this year. Not sure why.

Tried a few of the ones that had dropped and they were pretty good. The large majority on the tree look and feel like they need another week or two. These are wild and not heavy producers, at least this year, so think I might just freeze them as they fall, and like was mentioned by another member earlier, use them as bait for deer.

I took some pictures yesterday, for anyone who wanted to know what a persimmon looks like

They are pretty small, approx silver dollar size, and have a large pit, like a plum. They are sour, but I can see how with some sugar, in jam or a pie, they would be good.

Those look nice. One of my uncles that I used to help get up hay had a tree beside his driveway going back to the barn. I'd always try and be riding the top of it comin in from the field so I could pick me 2-3 when we would come under it. Man those were good.

Apparently the deer think they look nice too, my husband found a couple buck rubs in that area....he has never gone hunting (which is odd, his father is an avid hunter), so I am trying to talk him into it this year. We shall see....we may get lucky ;)

If they are still sour wait a little longer. When ripe they are delicious.

I swore all summer I wouldn't be roped into making any jams or jellies this year, what with the baby and every other blessed thing we have going on. But I have to say, looking at those loaded tree's, I am wavering.......

If you do make some I would love to get a recipe from you. I know I can find them but I prefer to get my recipes from known sources versus random websites.
