That word is a sentence all by itself.
I like bacon. A lot. I've even tried chocolate covered bacon and even bacon ice cream.
So when SHTF, I don't want to be without my precious bacon.
So, we have canned bacon now (again). When I was a kid and my father was stationed overseas, we had bacon in a can. Back then it was not cooked, it was raw in the can. Now my folks being from L.A (lower Alabama) thought this was some kind of heresy, kind of like instant grits, but we learned to eat it and like it.
We started preping way before Y2K and I once commented to Wifey about the canned bacon from years gone by. She thought I was nuts. She thought it was so funny and stupid. She made the mistake of mentioning it during Thanksgiving Dinner one year when we were visiting the folks. The MIL says, "Well bless your heart sweety, I guess you dont remember how much you loved canned bacon when you were young-un in Panama." Succotash almost came out of my nose.
So I discovered Yoders canned bacon. Holy Cow it's like crack in a can. I love that stuff. I have turned a lot of nay-sayers into believers.
So where am I going with this?
I have a "few" cans stashed away that I rotate through. I buy when I can find it on sale. Just found a site that has it for about $133 for a case of 12 cans delivered. here at MREFOODS.com (http://www.mrefoods.com/cart/product.asp?proref=ycbn). No I don't work for them, i just thought i would pass along what I think is a good deal

I imagine if you kept it cooler, like in a basement, it would last longer.
Keep it in your garage or tool shed, not so long.
I got some of the first cans that came out back in May '08 and honest to God I can not tell the dif between one of the older cans and a new one.
I have noticed that there is sometimes a slight difference in the 'smokeyness' from one batch to the next.

I saw the word "BACON" and went outside and kicked one of my chickens....I am a meat and potatoes man and breakfast is the only reason I get up sometimes. I'm sold and will be ordering some very soon.

Sorry I have not read all of the posts on the site, but I get the gist that you are not CONUS.
USPS priority is flat rate to a APO/FPO address, however, the problem is NO PORK or PORK BYPRODUCTs can be mailed to a 'muslim' country.
So, as long as there arn't any hadji's close by you would be OK.
Let me know. A man deserves BACON.

Yoders says there is about 3lbs (before cooking) in each can, and i believe it. About 45-50 slices cooked bacon/can.
Buy 3lbs of bacon @ $3.50 - $4.00 a pound. thats $10.50-$12.00 right there.
Now take it home and cook it. Then can it. Gotta buy cans too.
$10 sounds like a pretty good deal.
Like I said before, this is the only kind of bacon we buy, except if Wifey needs some raw bacon for seasoning or wrapping up some grilled goodness.
As far as flavor, it is not Maple flavored it is smoke flavored.

When you first take it out of the can it is like well cooked bacon. Very little uncooked fat. You can eat it right out of the can if you want. I like to nuke it for about 10 or 15 seconds and crisp it up a little.
How does it compare? If you didn't see it come out of the can, you would never know it. The only thing you will notice is that it is not the same "brand" that you usually have. Some cans are a little smokier than others. Its not sweet or overly salty. Tastes like the kind of bacon you would put on a BLT.

Its amazing what happens when California will allow a right handed pistol in versus a left handed pistol. The simple way to change it was to sue the state. I know some here may see that as distasteful, but when your plaintiffs are all physically handicapped, either missing their right appendage or it is handicapped, then the mindset changes. The same happened in California. They sat there on their high horses and smugly told us. . ." we are letting you have this handgun blah blah blah but only in the right hand variant, because thats all you people need". . . so we said ok. . . This is a lawsuit for discrimination against handicapped shooters. . . and the ball started rolling! Its amazing that the folks who sit there and say its for the people, and then they realize they just ostracized a whole voting class of people by one smug statement, how quickly they backpedal! We now have the Calguns Foundation and some really great folks, Gene, Oak, Brandon, not to mention so many others, that are bringing the fight to the state to get our rights back. Its been an exciting process for me, watching actual gov't at work.

Going to try that home canning of it, since my favorite bacon is done right here in Idaho.

But.....I'm thinking that some cases of Yoders would be in order.

Yesterday in Dallas I had the breakfast buffet. All you can eat bacon! So I got 2 slices of toast, buttered, tobasco, 10 slices of bacon and just enough scrambled eggs to top the bacon. Voila, a great breakfast sandwich. Take that you fast food purveyors of crap!!!!

It would last too long in that state around me. Years ago
I worked in a packing house. My job was to run the smokers to smoke ham and bacon. Man talk about some good smells. Always kept a sharp knife on me to trim up the bacon slabs whe I pulled them from the smokers to take to the freezers. We had 6 ovens that held between 18 and 63 double layer racks that held 36 slabs of bacon each.

I ordered a case of this bacon, thanks for the info! Unfortunately, I dont think it will make it into the long term storage category, as we have already gone through one can. The garden is pumping out the lettuce and tomatoes, so we are using this stuff up. Its just way too easy and conveinant, and tastes good too.

As a side note, the can we opened last week was a little different. There were about 60 slices but they were paper thin.
No matter, I put about a dozen slices layered on paper towels and nuked it for about 1 minute. I thought I heard the hallelujah chorus when I opened the microwave door.
As I turned around I saw the 3 cats and the TAST (Tactical Assault Shih-Tzu) all lined up for a sampling session.
I got 8/12 pieces to myself.
Wifey thought that was cute. Moochers.

INGREDIENTS:

1 goose breast, cut into thin slices (or a couple of duck breasts...)
1 bottle teriyaki (OR your favorite marinade... I personally like a mix of soy, oyster sauce, minced garlic & ginger, beer, etc.; Italian dressing works well; whatever else you can come up with )
12 jalapeno peppers
1 package (8 oz.) cream cheese
1/2 cup shredded cheddar or Tex-Mex cheese
1 tsp. fresh cilantro, minced finely
fresh ground S & P to taste
1 lb. thick-sliced bacon
toothpicks

DIRECTIONS:

Cut goose breast into slices and marinate overnight (at least... 24-36 hours is better) in the fridge in a Ziploc bag.

Soak toothpicks in cold water. The longer the better so they don't burn.

Cut off the tops and make a slice lengthwise in the jalapeno to make enough space to remove seeds. Make sure not to split the pepper all the way through when you do this. Remove seeds and ribs (wear gloves if you don't want any mishaps... trust me here ) and wash jalapeno with cold water.

Mix cream cheese, shredded cheddar, cilantro and salt and pepper in a separate bowl. Put cream cheese mixture inside a plastic baggie and cut a small slit on one corner of baggie (you're basically making a MacGyvered pastry bag). Squeeze mixture from the baggie into jalapenos.

Take a slice of goose breast and wrap it around the pepper, then wrap bacon in a spiral around stuffed pepper and secure the whole shebang with a couple of toothpicks.

Cover your grill with foil and grill the poppers until the bacon is cooked, about 15 to 30 minutes. Tent them with foil & let them rest for 5 minutes before serving.

1 tablespoon Dijon mustard*
(*optional - Add to the brown sugar and mix well)

Preheat oven to 400*

Cut bacon into strips a couple of inches long.

Dredge bacon in brown sugar/mustard mix until coated really, really good! (Use a 1 gal ziplock bag!)

Crumple up a sheet of heavy aluminum foil onto a cookie sheet so bacon can drain while cooking, or use a cooling rack placed onto a cookie sheet.

Bake for 20 minutes, or until crispy, let cool so brown sugar hardens up and enjoy!

You did not specify but I am assuming that you use uncooked bacon for this.
I cannot remember the last time we bought raw bacon.
Well, I'll just have to slide some into the cart next time we are at WM.
I wonder how this would be if you added a little cayenne pepper to the sugar?

I LOVE bacon! But I'm too cheap to pay for the Yoders, or other mainline suppliers of canned bacon. I found this instead.... and I'm now addicted to it. It is genuine bacon flavored goodness that can be sliced thick or thin and fried as crispy as you like it. I like it so much, that I'm having a hard time keeping a good supply on hand.
Fried up some just this morning as a side to some scrambled eggs with cheese. (I actually had some real bacon on hand this a.m. and still went for the can)

This is something my mom made for us (she's German) and it's wonderful.
Cook bacon nice and crispy, smash it to pieces.
Shred a cuke and add oil and vineagar - put in the fridge to cool.
Make mashed potato's.
Take the taters, make a crater in the middle...pour some of the cuke mixture over the hot taters and top with bacon bits...add salt and pepper to taste. Yummy.
The trick is to have taters hot and the cuke mixture cold and the bacon hot (or at least warm). Don't get too much juice on the taters, you want more cukes that are coated with the vineager/oil mixture....unless you find that you like the mixture covering your taters I guess it's a matter of taste.

It's not really tater salad (although that's really good too) because it's being put over mashed potato's and not boiled cut up ones. Also this has shredded cucumbers in it just scooped on top.

I have been to Burger King to sample the widely acclaimed "Bacon Sundae"
As a conneseur of fine Bacon and Bacon products I shall attempt to convey my thoughts on the BK "Bacon Sundae".
Wifey was absolutly appauled at the thought of Bacon and Ice Cream together.
The TAST on the other hand was quite accepting of the concept.
We went through the drive-thru (no dogs allowed inside) and ordered some other meat and potato products.
I looked all over the menu for the advertised "Bacon Sundae". Not there.
I asked Shineequa the BK drive-thru order mixer-upper, if they had it and sure enough it was so new, it was not on the menu yet.
I added that to the order and Wifey started giving me grief about it being melted before I got to it. Dont you worry about it I said.
I'm gonna eat it first.
I find a shaded spot to park and get started.
It looks to be just shy of a pint of vanilla soft serve with carmel (caramel, camel, cameleon however you want to say it) and semi dark chocolate sauce swirled in.
They then generously add pieces of broken up bacon to the top and poke a 3-4" piece of bacon in the top.
The bacon is a litle on the thick side, slightly salty, well done, not burnt but no raw fat on it.
OMG, Halleluya, pass the ammo, I want to be burried in this stuff!
A little heavy on the choco syrup and ice cream though. The TAST liked it too. Wifey, not so much.
I think it was about $3 or so.

here is a great idea. Cover a muffin pan with alum. foil and turn upside down. Place your bacon over each muffin hole and weave to form a basket. Bake in oven at 350 until brown. let cool to the touch and turn right side up. Fill it with what ever you want. Like a salad.

Sorry Taz, but although they are a great idea, they need to be filled with more meat! like bacon bits, bacon rolls bacon wrapped steak and bacon wrapped scallops. maybe topped with some squeeze bacon, and then garnished with slabs of double thick bacon. I think if you cooked bacon until it was dry dry dry, and then ground it it would be like bacon sprinkles.

Yeah, but you had to see it coming, I mean, with the severe drought this summer, the massive crop losses, esp on corn.....the prices go down a little as the market floods when farmers realize they have to downsize the herd, since they cant feed them all through the winter, then the price goes gang busters back up and over...

Dad actually warned us about this a few months ago, and said my sisters and I are each getting 1/3 of a butchered steer for Christmas, so if we want it to bring a trailer, and if we don't come we are out of luck on gifts, lol. Beats the pants off of regular stuff though!

Just came across this, haven't tried it yet though...

Bacon Marmalade



4 slices bacon, chopped
1 large onion, chopped
2 teaspoons Frank's red hot sauce
1 teaspoon sugar
1/2 teaspoon red wine vinegar
kosher salt
fresh ground black pepper

Directions:


Cook the bacon in a large nonstick skillet over medium-high heat until almost crisp, 5 minutes. Pour off drippings leaving about 2 tablespoons. Add the onion to the skillet and cook over medium heat, stirring, until the onion browns, about 10 more minutes. If it starts to stick add a splash of water to the pan. Stir in the hot sauce, sugar, vinegar, and salt and pepper to taste.

A little while back whilst introducing some friends to the joys of canned bacon, we started experimenting with adding bacon to other common items.
Bacon marshmallows. meh.
Bacon with peanut butter. meh pretty OK. Too much PB can over power the bacon
Bacon wrapped Jolly Rancher. Good but candy lasts longer than the bacon
Bacon wrapped Starburst? FAN-FRIGGIN-TASTIC!! OMG-where-have-you-been-all-my-life-ogasmic!
Preps now include a mega bag of Starburst.
I'm liking strawberry the best.

Did you try bacon wrapped bacon?

When you are frying regular bacon, and it is almost done, pour some pancake mix right over top of it, and kinda lift it up into the mix a little as it starts to cook. flip the pancake when it is time, and when it is done, you'll have a bacon stuffed pancake!

Had to google 'starburst'... don't even remember eating them.

might have to try some bacon wrapped gummy bears though, especially the tequila flavoured ones

You want something with the approximate toughness/chewyness of bacon so that the flavors dont fight each other and take away from the bacon.
They were better than marshmallows though.

I dont think they will work. Pretty tough if I remember right.
We tried some Laffy Taffy and that didnt work too well either as it was harder to chew into the bacon.
Rolo's did better than those Mini Reeses Cups.
One guy tried a piece of Hubba Bubba. The gum pretty much just dissolved into a sticky goo.
Some liked the Twizzler Bits, but i did not.
We also tried olives, mandarin oranges, asian pear, apple, and honeydew mellon.
Skittles were Ok but overpowered the bacon flavor.

Starburst still my favorite, other than just plain bacon

Stormy, now if you want a treat. SMOKE that bad boy. add something we call Armadillo Eggs.

2-3doz Jalapenos topped and seeded
1 package Cream Cheese
1 C. Cheddar Cheese
diced onion
crushed garlic
BACON
toothpicks

mix room temp cream cheese, cheddar,onion and garlic together. chill slightly and spoon into the cleaned peppers and wrap with bacon, secure w/toothpicks. then off to the smoker for 1 1/2-2hrs @ 200-225.
