View Full Version : Using your tomato skins

I don't know if any of you use your tomato skins or like me just toss them in the trash after sliding them off of your gorgeous red maters! Well I got this article and will now never throw away another skin again especially since when i make pizza i make my own sauce and need paste. who would have thunk? Thought I would share. The first part is just about canning tomatoes so most of you can scroll dows to the skin part (yes Izzy, there are pictures).

they were nice and dry, put them into a plastic bag and smooshed them up to wee tiny pcs. back on the dehydrator for another day, and tomorrow, I'll either run them through the food processor or mortar and pestle.

pretty tasty though!

Hey T. Sorry about the delay in replying, but I also I saw your pm...

The thread I referenced here was the food processor one. I threw a lot of skins away just before then, but due to this thread and that one I'll likely be trying to save them for paste next time. I hope that clarifies things some.

We did three bushels of mater before this thread came out. That would have went a ways.

it does take quite a lot to flavour something, or make a decent amount of paste, but since they are a free, quick and easy by product of what you're doing anyways, that makes it worth while in my book.

next plan is to try sprinkling some on popcorn (zucchini season is over so I can't try it on chips), and maybe try giving some powder a light mequite smoke for something different.
