One of my favourite preparations for these tasty little creatures, and since I managed to catch a few perfect eater sized ones last weekend, I figured I would smoke up a batch... and since I was going to have the smoker going I decided to fill it up...

cleaned and ready to go:

Sorry to disappoint Grumpy, but I generally try to avoid anything deep fried like the plague.

Didn't really make it long enough for a meal, just kinda disappeared...


How long are you smoking the fishes?

Smooked it at 120C for about 2 hours, combo of Apple and mesquite, then bumped it up to 160 for another 1-1/2 hrs.

Yahoo, it's a Southern thang! Them Yanks don't know how to do good catfish. Don't forget the tarter sauce!
