View Full Version : Have Dried Red and/or Kidney Beans in Storage?

I found this recently...

There is a toxicity with them and they need to be boiled for at least 10 minutes. If you're cooking dry beans the traditional way or pressure canning them they will be fine but this was good information for me because often I'll just throw a pound of beans in the Crockpot and cook them that way but a Crockpot doesn't get hot enough to destroy the toxin. I've marked all our buckets noting the boiling time so if I get hit by a bus tomorrow someone will know how to cook them properly. Good info. I have kidney beans growing now. Just got a few weeks till harvest.
