I canned some chicken a while back (probably 6 months ago) and tonight is the first time we ate it. It was still sealed up and smelled normal, I made a gumbo with it, hopefully I did everything right. Hope we don't all get sick. Sure tasted great.

Opening home canned food always puts a smile on my face. You know exactly what is in it, no extra unknowns added.

Yeah, unless it is full of botchulism (spelling). Since this was my first time doing it, I am a little nervous. So far feeling fine.

Helo, if you followed directions from a reputable source and your lid was still sucked down tight, you'll be fine! We were super nervous the first time, too!

Way to go dude! seriously... «you «did » GOOD!!!!

My wife is so anal about EVERYTHING I kill and want to put away... Given her background, it`s ok... When her friends comeover and she can tell them that it tested 1000%... IT MAKES me smile!!!

Yeah, it is so much better of a storage than freezing.

My wifes friend calls me Martha Stewart. I hate that.

Absolutely no comparison! Freezing is a last ditch effort to preserve food in mho. I was going to can some stew beef I got on sale at SAM's club but was too tired last night to do it so I ended up parcing it out and freezing it. I will definitely use it before opening up any of my home canned food. Freezing is dependent on electricity which can go off at any time, plus it can get freezer burned if not wrapped extremely well.

Glad you're still with us.

More importantly than YOUR health, I have to ask....

How's the monkey holding up?;)

The monkeys are doing fine. Going to let them stay outside tonight, temps should be nice.

Heck no, I won't let my monkey's around any gun. But they will fight anyone that I fight.

I'd go with a knife. I don't know about you, but if I had a monkey whip out a switchblade, I'd run.

What kind of story lies behind the missing monkey?

helomech

there is no missing monkey. I just got that name for some reason.

No, it just appeared one day. I don't think there is a story behind it, other than me having pet monkey's.

It's that Title Elf again. They show up, drop out a name, then gone again, show back up later.

Well, that's it! I didn't know you really had pet monkeys! I thought it was some joke I missed somewhere!

Helo, I kind of put that right up there with wild and crazy. I mean, seriously...but with no offense...I don't know anybody who has pet monkeys. They are an unusual pet to have. Although there was this family back when I was a kid. They had one of those little monkeys with a white face. Kept him in a diaper with a hole in it so his tail could come out. He used to pull all the clips out of their drapes and they were always hanging funny on their windows. The monkey was mean so they wouldn't let any neighborhood kids in the house but sometimes the monkey owner kids would bring him out on a leash. My mom freaked when she found out the neighbors had a monkey and always made me come inside if she knew the kids were "walking the monkey." :D

Here they are. Petey is a Bonnet Macaque and is 4 years old, closest to camera. We have had him for about 2 years. Harley is a 9 year old Java Macaque.
