Veggie soup...
After chatting with a friend, I have also decide to make and can some veggie soup for drinking after lunch at work, for several reasons.
1: cut down on the coffee/crap
2: increase the veggies
and
3: try a different way to canning.
Since it is raining anyways, I may as well play in the kitchen...

I use to make my own v-8 juice. Wash but do not peel fresh veggie's. Put fresh veggie's of your choice into a pot, add just enough water to cover, cook until tender, drain, save juice, mash veggie's in a cheese cloth over a bowl, add spices of your choice. ( I used salt, white pepper and cayenne pepper). Let cool, and add as much of the saved juice as you want. Put in the fridge. I saved the veggie pulp for stew. But you Sniper might want to dehydrate it and make bouillon out of it.

How about putting the pulp and part of the juice i a blender and make a veggie smoothy?
