Recently found a couple persimmon trees on our new property and don't have any experience with them. Seem to be ripe, soft to the touch and a few lying on the ground. Any advice on preparation or good recipes?

Persimmon bread and pie are great. Sorry don't have any recipes for you, we don't grow them.
Jelly.....or even better, bait deer.........
Wait until after the first frost to pick them. They have been known to cause "gastro-intestinal distress" if harvested too early. Found that out the hard way growing up in MO.

Thanks everyone. And Grumpy we often don't get a frost here until November, the way they are dropping off the tree I would think they would all be gone by then. Guess I'll be doing some research before trying them...don't need the bubble guts.
If they are not so sour they make you get a severe pucker, they are probably ripe. Specially if they are dropping. Maybe try a bite or two

If they are not ripe you will know it. If we wait till frost we would never get any persimmons here, I eat the wild ones, but we don't have any this year. Not sure why.
Tried a few of the ones that had dropped and they were pretty good. The large majority on the tree look and feel like they need another week or two. These are wild and not heavy producers, at least this year, so think I might just freeze them as they fall, and like was mentioned by another member earlier, use them as bait for deer.
