My Pressure Cooker Adventures: A rolling blog

Ill roll a blog here on my pressure cooker adventures.

Base is an 8 qt cooker, Presto brand, $60 at Sears (no one else sold a respectable brand, the one at WalMart had *no* shelf, which IMHO is a critical part of the system!), aluminium.

Lasst night, BBQ pork chops. Sweet Baby Rays on top of chops, chops on shelf with 1 cup water. Cooked 40 min. Some of the sauce infused the meat, but I was disappointed by the end flavour... Finished product was covered in sauce out the bottle. Flavour was pretty good, but I still prefer the taste and kandy and texture of BBQ chops on a grill. Meat simply fell off the bone and was tender as hell, melt in your mouth. Finial grade: 5/10 It was a good meal, but I wouldnt do it again.

Tonight: 5 thick boneless skinless chicken breast. 1 full bottle of Italian salad dressing and 1 cup water. Cook time is 30 min. Kitchen smells great, but it is in process so Ill report back with result and final grade later.

Tomorrow night: Beef stew, details to be posted.

Update: the chops had an internal temp of 195 when done.

Just took the chicken out the cooker, internal also 195+... Texture is great, flavour is outstanding! 10/10 final grade.

We just put fresh kale in to cook, 2 cups water, cooker jammed full of kale, once jiggle starts 15 min cook time. I "accidently" threw out the fatback, so it wont be like it should... *NOW* she tells me it was CURED fatback.. had I known that, I wouldnt have discarded it on the last 'fridge clean out. None the less, I already know the kale will be grand, but Ill miss the fatback... DAMN ME TO HELL! :-(
(Not all the kale would fit so we have some for a later cook, so tomorrow... yeah, I get replacement fatback. Duh)

I have to admit I'm not real proficient with a pressure cooker. The only real thing I use it for is boiled peanuts.
Mainly because they take for ever in a regular pan on the stove.
They say that the cockroaches will be the last creature alive on this earth.
I intend on being the last person alive still stomping cockroaches.

We've started cooking with ours too. For outstanding chicken breast or pork chops you can't get them more moist. We have replaced the water with just stock for some flavor. The artichokes come out excellent.
