Just because we are peaceful does not mean we have forgotten how to be violent.
Basically you can use the same recipes as for pork.
Same types of parasites so the meat needs to be cooked in a similar fashion and using similar spices works well.
I eat bear all the time, assuming the hunting gods smile favourably.
But yeah, treat it like pork, except for the fat. where pork fat is yummy, bear fat, not so much. It is greasy and can be VERY Gamy. For an enjoyable bear eating experience, trim off as much fat as you possibly can. My wife probably cooks bear the most often, and her favourite way is in the slow cooker. (I pre-trim the meat) In the morning she drops a roast into the crockpot, dices up some celery and carrots and potatoes. Adds a can of crushed tomatoes (large), a can of tomato Juice, a handful of the green herbs, top it off with water and put it on high for about 7 hours.
